Peruvian Cuisine: An International Trend

It is widely known today that Peruvian Cuisine has gained a prominent space among the best in the world. Its fame has spread beyond Peruvian borders due to the extraordinary variety and quality of cereals, fruits, legumes, meat, etc. Further, this coastal nation offers us an exquisite variety of seafood and fish.

Traditional Peruvian Cuisine is a fusion of Spanish and Native Peruvian culinary styles.  Basic products such as potatoes, maize, peanuts, aji (Peruvian hot chili), fish and seafood trace back as far as the era of the Inca Civilization.  Later on, with the arrival of the conquerors, many new ingredients were imported from Europe and other parts of the world, such as wheat, oranges, limes, peaches, eggplants and onions.  At the same time, European recipes began incorporating native products.

Throughout the 19th century many colonists arrived bringing with them their own culinary secrets, creating delicious dishes that combined flavours of four continents, most of which are still eaten regularly in Peruvian homes.

Nowadays, Novoandine Cuisine, which emerged from a creative and innovative combination of Peruvian native ingredients and modern, sophisticated elaboration techniques, is contributing to a more intense difusion and a greater appreciation of the constant evolution of Peruvian Culinary Arts.
